Orange And Lemon Breadcrumb Cheesecake

Ingredienten:
1 tbsp icing sugar
2 lemons, zest only
1 lemon, juice only
200g/7oz soft cheese
2 tbsp double cream
110g/4oz white breadcrumbs
2 tbsp honey
1 small orange, peeled and segmented
sprig of fresh mint
icing sugar, to dust
85g/3oz caster sugar

Voorbereiding:


Bereidingswijze:
1. Place the sugar, lemon zest, lemon juice, soft cheese and double cream into a bowl and mix together to combine.
2. Heat a non-stick frying pan until hot. Toast the breadcrumbs in the dry pan for two to three minutes, or until golden.
3. Remove from the heat and place the breadcrumbs in a bowl. Stir in the honey and mix together.
4. Place a 8cm/3in wide chefs ring in the centre of each serving plate and spoon the breadcrumbs between the rings.
5. Spoon the cheese mixture on top of the breadcrumbs and smooth off using a palette knife.
6. Remove the rings and decorate the top of the cheesecakes with the orange segments in a fan shape.
7. Garnish with a sprig of mint and finish with a dust of icing sugar.
8. To make the caramel, gently heat the sugar in a pan until dissolved and caramel has formed.
9. Drizzle the caramel around the edge of the plate.
10. To make the spun sugar, take a spoonful of the caramel and quickly wave it back and forth over a steel or rolling pin to make very fine strands. Quickly gather them up into a ball before they completely set hard.
11. Sit the spun sugar on top of the cheesecake and serve
